Gingerbread Spoon Cake Gingerbread Spoon Cake

A warm pudding like cake dessert made in the slow cooker!  You’re family will love it and your dinner guests won’t believe you made it in a slow cooker.

Servings: 8
Prep Time: 15 min
Cook Time: 2 3/4 hrs
Difficulty: Easy

Ingredients Add to grocery list

1 (14.5 oz.) package gingerbread mix
1/2 cup half and half (can substitute milk)
pinch of cinnamon
pinch of ground ginger
1/2 cup golden raisins
2 1/4 cups water
3/4 cup dark brown sugar, packed
3/4 cup butter
1/4 teaspoon vanilla
Whipped cream or Vanilla bean ice cream to serve
chopped candied ginger for garnish(optional)





Spray a 4 quart slow cooker with nonstick cooking spray. 

In a medium mixing bowl, stir together the gingerbread mix, half and half, cinnamon and ginger and raisins until moistened.  The batter will be very thick.  Spread the batter evenly over the bottom of the slow cooker. 

In a medium saucepan over medium high heat, stir together the water, brown sugar, butter and vanilla. Bring mixture to a boil and carefully pour over the batter in the slow cooker. 

Set the slow cooker on the high heat setting and cover.  Cook for 2 hours (the center will still appear very moist and a pudding like consistency).  Remove the liner from the slow cooker or just turn the cooker off and allow to stand, uncovered, for an additional 45 minutes.  Cake will be slightly cooled.  Serve a spoon full of warm cake and pudding like center in a beautiful dessert bowl and top with a scoop of vanilla bean ice cream or whipped cream and sprinkle of chopped candied ginger.

Anxious to try your Gingerbread Spoon Cake. Will make my home have the comfy smells of fall with the benefit of that special fall dessert. Am so happy for you Paula that you are back on your feet and moving forward with an upbeat attitude. Wal-mart and those other stores have lost out as every time I have to shop there I always find the manager and let him/her know how unhappy that your products are no longer in their store and I will take that part of my business elsewhere. Congrats!

Last year I was looking for a quick start it and leave it recipe for a Christmas Potluck that I go to every year. This was a hit then, and when it came time this year to start planning for the potluck I was stuck as what to make, seeing as my shift is nights and my partners is Days so I asked one of my friends that helps me plan the potluck and he said, "You should bring that"Gingerbread dish" that you did in the slow cooker" I have a feeling that its going to be come a staple at our Potlucks, Thank you so much for the recipe... Just came home from a church picnic where this was a total hit. I did't put the raisins in as I forget to buy them and I used 1/2 tsp of cinnamon and 1/2 tsp of pumpkin pie spice for the spices as I love cinnamon and I forgot to buy the ginger too";". Can't wait for another excuse to use this again and make it the original way!
