3/4 cup sugar
1/4 cup unsalted butter, at room temperature
2 eggs
1/4 teaspoon salt
1/2 teaspoon vanilla extract
1/2 teaspoon lemon juice
1/4 teaspoon ground cinnamon
1 1/2 cups all purpose flour
1/2 cup candied red cherries
1/2 cup candied green cherries
1 cup dried pineapple pieces
2 cups pecans, roughly chopped
Preheat oven to 300 degrees F.
In a large bowl, cream together butter and sugar using a hand mixer. Add eggs, salt, vanilla, lemon, and cinnamon and mix until well incorporated. Slowly add flour and mix well. Fold in fruit and pecans. Drop by rounded tablespoonfuls onto a greased cookie sheet. Bake for 23 to 25 minutes. Allow to cool completely.

These cookies *are* really good; I made two batches. BUT there *is* a trick to them: Go heavy on flavor and use good candied fruit. The first batch was bland. The second time I made these, I added 1/8 tsp each of allspice & nutmeg and I skipped the lemon juice and vanilla in favor of 2 tsp of brandy (don't worry--there's no taste of alcohol post-baking). Also in the second batch, I used a fine chopped fruitcake mix that had cherries, pineapple AND citron and citrus peel. The difference in quality between my two batches of cookies was ENORMOUS! It's a major major difference: One is gift-worthy, one is not. Thanks for the great recipe, Paula!

Easy to prepare, these were a hit at our house. I do recommend chopping the cherries and pineapple into pieces. My kids enjoyed helping too!
