Prep Time: 5 min
Cook Time: 4 to 6 min
Difficulty: Easy
1 cup mashed potatoes
1 cup flour
1 teaspoon baking powder
1 teaspoon salt
1 egg, beaten
5 tablespoons milk
In a large mixing bowl, mix ingredients in order given. Drop from a tablespoon into deep fryer at 360ºF. When brown, drain on brown paper. Serve hot.
Notes from The Paula Deen Test Kitchen: A light and fluffy potato ball. We sprinkled with Paula Deen’s House Seasoning as soon as they came out of the hot oil and they were delicious. We also tried some right out of the hot oil with maple syrup and they were also delicious. Must be eaten hot/warm.

You can add seasoned cooked beef in the center of each potato ball before frying. It's a hispanic favorite.

I made these with 1 1/2 cups mashed potatoes, 1 cup flour, 1/2 tsp salt (my potatoes were leftover with plenty of salt), 1 egg, and 1/4 cup milk. I had to add a dab more flour to it. I mixed them 1 ingredient at a time with my hand mixer. I fried them like beignets and they turned out very good. Like a heavier beignet. We even sprinkled powdered sugar on them like donuts. Next time I will add some sugar. The kids loved it.
