Dustin’s Chicken Spedini

Ingredients Add to grocery list

2 cup Italian bread crumbs
1/2 cup high-quality olive oil
1   large white onion, sliced thick long-wise
4   dried bay leaves
3   large boneless chicken breasts, cut into strips
6 ounce Asiago cheese (or any good Italian cheese), cut into 2-inch cubes




Preheat oven to 350 degrees.  Spray baking pan lightly with cooking spray.  Wrap cheese cubes in chicken and secure with a toothpick.  Dip into olive oil and roll in breadcrumbs.  Place chicken in bottom of the baking pan. Top with bay leaves and sliced onions.  Bake for 15 to 20 minutes until chicken is done and cheese is melting.  Breadcrumbs should be golden brown.

My wife and i tried our own spin on this recipe we used mozzerella cheese and wrapped the chicken and cheese with bacon and used texas toast chees and garlic croutons for the bread crumbs and it came out amazing. i think maybe next time we will try applewood smoked bacon.

This recipe is very easy and tastes great smile My husband is Italian and his grandmother and mom make their own version of this. They however, spend hours in the kitchen and I don't.

I thought this to be very easy to make !! Did taste a little like "Shake and Bake" seasoned chicken though. The asiago cheese was very good in this.
