1 1/2 cups crushed Ritz crackers (about 35 crackers)
2 1/2 cups grated cheddar cheese (10 ounces)
4 tablespoons (1/2 stick) unsalted butter, melted
2 tablespoons cold unsalted butter, cut into pieces
4 1/2 cups cooked elbow macaroni (8 ounces uncooked), drained and kept hot
2 large eggs, beaten
1/2 cup milk
1/4 cup sour cream
1/4 teaspoon salt
Preheat the oven to 350°F. Lightly grease 8 cups of a 12-cup muffin pan.
In a bowl, combine the crackers, 1 cup of the cheddar cheese, and the melted butter. Divide the mixture among the prepared muffin cups and press firmly in the bottom and up the sides of the cups.
In a large bowl, mix the macaroni with ½ cup of the cheddar cheese. In a small bowl, combine the eggs, milk, sour cream, cold butter pieces, and salt. Stir the milk mixture into the macaroni.
Spoon 2 tablespoons of the macaroni mixture into each cracker crust and top with the remaining cheddar cheese. Bake for about 25 minutes, or until the cheese is browned and slightly crispy. Allow the pies to cool slightly before unmolding and serving warm.

Most of Paula's recipes are wonderful, but even though this recipe has received rave reviews, the "muffins" were bland and pretty much tasteless. I used the recipe, as written, except substituted Cheeze Its for the Ritz crackers. I think the concept is a novel one, but I am going to play with my recipe, which has minced onions, and a cheesey sauce that included cream cheese, cheddar cheese,some Worcestershire sauce and hot sauce in the recipe to give added flavor. My daughter was disappointed in the blandness too and begged me to modify my recipe to turn into muffins, so that is where I am headed.

These were quite delicious. I didn't have crackers, but substituted crushed herb croutons and it turned out very well. Next time I'm going to try a lighter version by substituting olive oil for some of the butter, cutting back on the amount of cheese, and using low-fat or non-fat sour cream. Thank you Deen Brothers!

While the pork chops were cooking I made the mac and cheese which looks YUUUUMMMMMY!! My husband had to go to a meeting and will have to reheat. Auston is salavating as we speak, and cannot wait to try his meal that might be the one for the Acedemic Fair. Made extra mac n cheese to bring into the teachers to try and be our test dummies, I mean judges. lol.

I love this recipe, and so does everyone who eats them when I make them. I always get asked for this recipe!! I follow everything w/ this recipe, but use extra sharp cheddar and replace the ritz crackers with Chez It crackers. They are yummy cheesy! Thanks Paula, I love all your fabulous recipes!!

This was a huge hit at Sunday supper. I used a mini-muffin tin and the recipe yielded 24 mini-muffins. I also used club crackers in place of Ritz crackers and it was fabulous anyway. One reviewer mentioned left over macaroni and a dry muffin...I had leftover macaroni too, but I spooned a T. of "juice" over each mini cup before sprinkling with cheese and it turned out perfect. I will most definitely be making these again and again!

I made this for Father's Day today ... after seeing it made on one of Paula's shows a few weeks ago. It was perfect .. SUPER EASY! We are huge mac n cheese eaters and the muffins were so awesome!! It was good, but mine came out dry, I didn't overcook...hoping that someone could tell me why. I also had a bunch of macaroni left over. Was my muffin tin to small? I used a regular size one. Please help!

I was given the job of cooking mac n cheese for Thanksgiving. This is a big job, because people are serious about their mac n cheese! I looked through a lot of recipes and decided to try this one. I figured anything with Ritz crackers has to be good. I also liked that it was a little different from traditional recipes. My boyfriend wasn't sure about my choice and made me do a trial run the night before the big day. Oh my gosh! You will not believe how GOOD this recipe is! Everyone LOVED it! Thank you boys!
