2 cup seedless red grapes halved
1 2-ounce package slivered almonds
1/2 cup chopped celery
1 8-ounce can sliced or chopped water chestnuts drained
1 large roasted chicken cut into 1-inch cubes
Dressing:
1-cup mayonnaise
1-tablespoon soy sauce
1-tablespoon fresh lemon juice
1 1/2 teaspoon curry powder
1 tablespoon prepared mango chutney
Salt
Gently combine the chicken, celery, water chestnuts, grapes, and almonds in a large glass bowl. Combine the dressing ingredients and mix well. Add to the chicken mixture and stir gently to combine. Season with salt, to taste.

Made it for company, family ate the leftovers. Everyone liked it. It's delicious,simple and not too curry-y. My guest (who is very much a meat-and-potatoes person) said that they were inspired to try using cooking powder in their cooking after they tried it. I used a rotisserie chicken from the grocery store. One note - choose smaller grapes for salad consistentcy.

I used 2 T. Honey instead of the mango chutney as well as 2 T fresh lemon juice and it was delish. I will try it again with the mango- Also I used a regular rotiserie chicken from grocery-Quick and easy!!

THIS IS A GREAT SALAD. I LEAVE OFF THE CHUTNEY, JUST NOT A FAN OF IT, BUT IT IS WONDERFUL ALL ON IT'S OWN. I AM THINKING OF USING YOGART INSTEAD OF MAYO (OR 1/2 &1/2) TO CUT DOWN THE FAT. THIS IS TRUELY A GREAT SUMMER SALAD

This is delicious! Serve it with warm naam bread and it is a winner for a nice meal. My 4 year old gobbles it up. I add more curry to spice it up and would recommend making it ahead of time to let the spices settle in to the dressing. Tastes better the 2nd day.

I found a recipe my picky husband liked! YEH! I did avoid the mango chutney for allergy reasons and used canned chunky chicken. What a wonderful quick fix side dish!
