Cooking spray
1 (10 ounce) package frozen chopped spinach
4 eggs
1 cup sour cream
1 cup small curd cottage cheese
1/2 cup grated Parmesan
1/4 cup unbleached all-purpose flour
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 cups grated Cheddar
Preheat the oven to 325 degrees F. Spray an 8 by 8-inch baking dish with cooking spray.
Unwrap the spinach and put it, box and all, on a plate. Microwave and cook on high power for 4 minutes. Allow it to cool and remove it from the box. Squeeze out all of the liquid out of the spinach and put it into a medium bowl.
Combine the eggs, sour cream, cottage cheese, Parmesan, flour, salt, and pepper, in a medium bowl. Stir together, or blend in food processor until the mixture is smooth, about 1 minute. Pour the mixture into the bowl with the spinach. Add the Cheddar and blend with a spoon until well mixed. Pour the spinach mixture into the baking dish and smooth out the top.
Bake until set, about 45 minutes. Remove the baking dish from the oven. It will be puffed up, but will fall slightly as it cools. Allow it to cool, then, refrigerate. Cut it into squares and serve.

Absolutely the BEST spinach dish I have ever had!! My family prefers it warm. So quick and easy to make. I made an extra batch, cut up in squares and froze for quick and easy lunches!

I am looking at this recipe and figuring out how to make it with a little less calories. I am planning on getting less fat sour cream and cottage cheese, then I see it calls for unbleached AP flour. Can you achieve the same result with whole wheat flour or regular AP flour, or could I use half whole wheat and half regular AP? Thanks for the help!

Yummm. love cheesy dishes! Wanted to bring a wheat-free gluten-free potluck dish to a brunch. I followed the recipe and only changes were cutting back a bit on the salt and using rice flour instead of regular flour. I made it the night before and refrigerated it. I found that it was best served reheated. Dish was a huge hit with all ages! For colour I sprinkled Just a tiny bit of smoked paprika on top.

I made this after watching you cook it on your show I did add finely chopped onions cause I just Love onions and my sister and I ate the whole thing. I love cooking your recipes. Hi, I purchased one of Paula's Gooey Butter Cakes at Walmart and it was delicious.....I still want to make it myself to see if it taste like hers..... And I used to make a Crustless Spinach Quiche (lost my recipe ) but it is delicious....much better than making them with a crust......thanks Paula for giving us this recipe.....now I can make it......

I made this tonight for dinner and it was fabulous! My whole family thought it was delicious! So cheesy and flavorful, and a great way to get my kids to eat spinach!
