Creme De Menthe Brownies

Shaved Creme de Menthe thins (recommended: Andes Creme de Menthe thins)
1   (10-ounce) package Creme de Menthe baking chips (recommended: Andes Creme de Men
1/2 teaspoon baking powder
3/4 cup unsweetened cocoa
1 teaspoon vanilla extract
1 1/4 cup all-purpose flour
2 cup sugar
4   large eggs
1 cup (2 sticks) butter, softened
Chocolate frosting, see recipe below

1/2 cup (1 stick) butter, melted
1/3 cup cocoa
2 cups sifted confectioners’ sugar
1 teaspoon vanilla extract
2 tablespoons milk





Preheat oven to 350 degrees F.  Grease a 13-by-9-by-2-inch pan.

Using an electric mixer, combine butter and sugar in a large mixing bowl; beat at medium speed until creamy.  Add eggs, one at a time, beating well after each addition.  Add vanilla, mixing well.

In a separate bowl, combine flour, cocoa, and baking powder.  Gradually stir into butter mixture.  Fold in mint chips.  Spoon into greased pan.  Bake for 35 minutes.

While brownies are baking, prepare frosting.  Combine butter, cocoa, confectioners’ sugar, vanilla and milk in a large mixing bowl; beat at medium speed with an electric mixer until dry ingredients are moistened.  Beat at high speed until spreading consistency. 

Remove pan from the oven and allow brownies to cool in pan on wire rack.  Spread with chocolate frosting.  Top with shaved mint thins.

I LOVED this recipe! The brownie recipe was fabulous ~ dense & chocolatey w/ the creme de menthe..divine! Who can beat Paula Deen!

I've grown so tired of brownies... they are everywhere! My mother-in-law makes them for every function. And it seems every party I've ever attended... there's brownies. BOXED BROWNIES, might I add. I've gotten to the point where I just don't even have a desired to taste them when I am at a festive function. Paula's Creme de Menthe Brownies looked so easy to make... and let's face it, everything is better from scratch, right?! So my daughter and I gave these a try. O... M... goodness! Not big mint fans, we substituted the mint candies for Hershey pieces. My daughter says "I will never look at another brownie again. It's just not worth the calories!"

I made this for the people at the cancer center along with a few more receipes I had to have a bite for myself and I must say this was so so good.... I dont eat sweeties that often but I wouldn't mind keeping a batch on this in the freezer to bring out on a whim.... Very good Paula like so many of your receipes A fan of your show. Robbie

I made this for a church group and my family. Everyone LOVED them. They are amazing! I couldn't find creme de menthe chips so I used the chocolate mint chips sold at craft stores for candy molds. Tasted great- just the right amount of mint/chocolate flavor. Thanks, Paula!

BEST DESSERT EVER! I love these brownies. I could not find Creme de Menthe baking chips so I cut up half the Andes mints into pieces and used them instead. Then I used the other half for the shaved mints on top. They were awesome. - Amanda R. Williamsburg,VA.

Soooo delicious, and the frosting was incredible. In fact, I'm going to be using this frosting recipe for all my baking that requires chocolate frosting. The only negative thing I have to say is that the amount of mint chips makes these brownies very minty, which can get to be a little much after a couple of days. In the future, I will make these for a crowd and not just me and my husband. Otherwise, excellent brownies -- super delicious and easy to make.
