Warm and comforting on a cold winter day

Servings: 4 servings
Prep Time: 15 min
Cook Time: 40 min
Difficulty: Easy

Ingredients Add to grocery list

1/2 teaspoon salt
2 tablespoon butter
3   cans chicken broth (13 3/4-ounces each)
2   carrots, peeled and diced
1 cup diced onion
2 lb Butternut Squash, halved, peeled and seeded; cut into 1-inch pieces
1/3-1/2 cup light cream, you can use heavy if desired

Directions

Place squash in saucepan along with carrots, onions, and broth then add in the salt.  Simmer 40 minutes uncovered.  Puree soup in a blender or food processor along with 2 tablespoons butter.  Pour a little hot puree into the 1/3-1/2 cup cream so not to curdle the cream; add to soup.  Serve in a wide mouth shallow bowl with a dollop of sour cream, if desired.

Good Morning.. Wondering if there is any way you can put the carb. content on some of your recipys? I have been able to modify most recipys if i know it's high in carbs. but i am still in the learning portion of my diet. Lost 39 of my 40 lbs. and blood sugar is doing great BUT i am ready to eat a few holiday nummys and am looking to you to help all of us that where told diebetes is the end to fun filled food.. I say.. pluuuuup we will just change the recipy...lol

I also LOVE the roasted butternut squash soup from Atlanta Bread Company and wanted to try to cook it myself. Perfect cool Fall day to try it here today in Georgia and I love, love, love this soup! Made it just like the recipe calls for and it is so good! I wouldn't say that it tastes "just like" ABC's soup, but it is equally good. It was very easy to make and I will definitely keep making this soup for years to come. Thank you!

I fell in love with the butternut squash soup from Atlanta Bread Co. I wanted to try and make it myself, however, I am not a seasoned cook so I must admit that I had my doubts about being able to pull it off. I tried to make the soup using this recipe and I have to admit that it's now on the top of my list of "things mommy can actually cook." I just made this soup. And it is fabulous!! I went exactly by the recipe. I made it for sat (2 days early) as one review said it got better as it set. I may have to make another batch!! SOOO YUM!

Very nice soup! I add a little orange marmalade to the sour cream and a little orange zest to the top. I like the citrus effect to this soup.

Mrs. Dean I have been fortunate to try your Mini Caramel bundt cake at our local Wal Mart deli. They no longer carry these. Is there any place That I can find these? They are absolutely delightful. Best part I don't have to bake them. Thank You K. W.

This is a recipe I sent to "Paula" several years ago...just after my mom died. I was a flight attendant and had been to her restaurant several times, but never met her. I worked part time at a Gourmet foods store teaching and doing demonstrations and catering on request. When I found out she was getting married, I asked a co-worker who was going to Savannah to take her a present. I sent her a lemon press and this recipe and a letter telling her how much I enjoyed her show and what an inspiration she was to me in a difficult time... I closed it, "With Luv from My Kitchen to Yours"...I got a release letter a few months later and a phone call to o.k. the use of it on her show. They used the basic recipe and not all the options that I included, ( I sometimes add curry or nutmeg, cinnamon & apples or bacon, shrimp or lump crab etc..depending on the taste I want to achieve). It has made my day many times to see each review and how some have not change a thing and others have taken as a simple recipe add what they like and made it a family favorite. It has been my 15 min. of feeling good about creating food for others. It appeared on her show with Uncle Bubba's soups and she said my name... I was so happy I cried, it made me feel that I could cook and others liked the taste I had created....My dream was to be a saucier but at 40 plus it was just a dream. This tasted better a couple of days after I made it. At first it tasted very "vegetably." It almost tasted like carrots or something. BUT THEN--It was oddly addictive after about a couple of days. I kept eating it with a half sandwich for lunch and it was SO perfect. My daughter didn't like it, but my husband said it was good. My niece had two bowls. I think it was a success!

I, too, went looking for the ABC recipe and came across this one by Mrs. Paula "Butter" Dean. After reading the comments regarding the similarity of taste to the ABC Roasted Butternut Squash soup, I knew I had to try it. I had never cooked with a butternut squash before, so I just picked up the first one I saw at the market--it weighed 5 pounds. Fast forward, I followed the recipe precisely and I was overwhelmed by the great tasting soup I made in my home. I dreamed about the great taste of the soup, got up the next morning and had it for breakfast! It is the BOMB!

This soup is my secret weapon on the holidays. I always have to double batch it so my guests can have some to take home. I crumble bacon and chop some green onions to add as garnish. Adds another flavor and crunch. Yum Yum!

Amazing recipe! I was heart broken Atlanta Bread Company (at least the one by me) didn't have this soup this season. I made this tonight and it is honestly better. I substituted the chicken broth for veg. broth and it is amazing. So glad to have some great butternut squash soup! And yes, Rose, you peel the squash like a potato.
