Difficulty: Easy
1 (8-ounce) package cream cheese, at room temperature
1/2 cup butter (1 stick), at room temperature
1 pound confectioners’ sugar, sifted
1 teaspoon vanilla extract
1/2 cup chopped pecans (optional)
In a bowl, blend together the cream cheese and butter. Gradually add the confectioners’ sugar and beat until light and fluffy. Beat in the vanilla. Stir in the pecans, or reserve them to sprinkle over the frosted cake. Fill and frost the cake when it is completely cool.
This was soooooooooooo easy and delicious . . . I made it before and could not find the recipe. I did not use the butter in the recipe I could not find so adding the butter was a PLUS, PLUS, PLUS. I was creamier and it seemed to has brought out the cream cheese flavor a lot more!! Side Note: did not use the nuts because every one does not like them: I like nuts!!!

Great Recipe!!!!! I changed it up a little. I only added 1/4 cup of butter so I could get more of a cream cheese flavor. Was a liitle loose so I put the cake in the refridge after I iced it. It was wonderful!!!!

Had to look up your recipe for Cream Cheese Frosting. I am baking around 65 Pumpkin cupcakes for the Veterans Hospital Bingo Night and will be using your recipe for the frosting. My husband is in the Elks Lodge and they go once a month and takes sandwiches and a snack for the Vets that are able to come and play Bingo. They can only win one time and they get 2.00 for the Bingo. That way there can be alot of different winners.
