2 lbs. boneless skinless chicken breasts, poached and shredded
1/2 cup hot Sauce, (Courtney uses Frank’s Hot Sauce)
1/2 cup blue cheese dressing, (Courtney uses Marie’s Blue Cheese Dressing)
4 oz. Cheddar cheese, grated
4 oz. Monterey Jack cheese, grated
Salt and pepper
4 oz. blue cheese, crumbled
Preheat oven to 350ºF.
In a medium mixing bowl, stir together the hot sauce, dressing, Cheddar cheese and Monterey Jack cheese just until combined. Salt and pepper to taste. Gently fold in the shredded chicken and pour mixture into a casserole dish that has been sprayed with a non stick cooking spray. Top with blue cheese and bake until cheese is melted and bubbly (approximately 30 minutes). Serve with tortilla chips or a crusty bread.

To Sue Nickel - I have made Queso using cheddar & monterey ; just make a thin white sauce and add the cheddar and jack cheeses to it (along wiht whatever spices etc you want)

I dearly love you Paula and watch you whenever I can. You are a beautiful person inside and out. Would love you to answer a question for me! I have always loves chili con queso but I now don't like velveta cheese any more. What kind of cheese can I use as a substitute that is smooth melting? I made this recipe as instructed and then one with ranch substituted for the blue cheese dressing (and omitting the blue cheese crumbles). Both options were a hit at our Super Bowl party.

I made this for Super Bowl Sunday and it was THE HIT of the party. My husband doesn't even like Blue Cheese or Blue Cheese Dressing and he was raving about it for two days. Five stars. : )

I fixed this dish for a super bowl party and, unfortunately, it was a flop! I followed the recipe exactly although it did not specify the size of the casserole dish. Without knowing the dish size I was unsure of the preferred thickness so I used a small sized dish making the casserole thick. I think this was the problem. If made again, I would use a larger dish making a thin casserole.
