Difficulty: Easy
3 slices bacon
1/2 cup finely chopped yellow onion
12-ounce bag baby spinach
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
In a large skillet, over medium heat, add the bacon and cook until crisp, about 7 minutes. Transfer the bacon to a paper towel-lined plate to drain. Pour off all but 1 tablespoon of the fat from the skillet. Add the onion and cook, stirring, until softened, 3 to 5 minutes. Add the spinach and toss until wilted.
Add the cream and salt and pepper, to taste. Let it bubble over medium heat until the cream is thickened and clinging to the spinach, about 10 minutes. Transfer the spinach to a serving bowl, crumble the bacon over the spinach, stir, and serve.

Paula, I just wanted you to know that I have developed an excitement about cooking since discovering shows like yours. I feel like I'm right there in your kitchen when I watch you prepare meals, and I thoroughly enjoy your interaction with Jamie and Bobby when they come over. I know it's TV, but I think you and I would be great friends if we would ever cross paths. If I ever get the opportunity to visit Savannah, I will definitely make my way to the Lady and Sons. This is a very simple recipe. It is delicious. It is now my favorite. It is much lighter than the recipes you see at there with all the cheese. Thanks Paula.

Dearest Mrs. Deen, A few months ago I sent you an email for a dear friend of ours in Alabama! Garry Rushing in Black Bear Cove Campgrounds. You had sent him a package of about 1 dozen of your magezines, and 1 of your cook books! When he received this, he was in the hospital, (You see we almost lost him!) His wife Charlotte brought it to him, and he actually thought it was a joke! Well long story short, he is alive, well, and doing fantastic, Thanks to you!
