Corn and Carrot Salad with Golden Raisins

Ingredients Add to grocery list

2 tablespoons mayonnaise
1 tablespoon extra-virgin olive oil
1 tablespoon freshly squeezed lemon juice
1/2 pound carrots, grated, about 2 cups
1 cup frozen corn kernels, thawed and drained
1/2 cup golden raisins
5 tablespoons chopped fresh parsley leaves
Salt and freshly cracked black pepper





In a small bowl, whisk together the mayonnaise, oil, and lemon juice.

Combine the carrots, corn kernels, raisins, and parsley leaves in a large serving bowl. Pour the dressing over the salad and season, to taste, with salt and pepper. Serve immediately or store, covered, in the refrigerator until ready to use.

this is good with a little bit of small chunk pineapple mixed in too'' and small apple bit's'' try it ..Also i'm looking for a recipe for wilted leaf-lettuce salad with hot-bacon and vinager dressing mom used to make it and i never watched her make it .lol just my luck she never wrote it down for me lol i know it was sort-of-a sweet taste to it ' if you can help i would really like it '' Love ya Your loyal follower'lol jim brown

My sister-in-law made this salad for a covered dish dinner. It was a big hit. If I were making it for my family only, I would add some spice, but we all enjoyed it as it was.
