4 large sweet potatoes
8 tablespoon (1 stick) butter
3/4 cup brown sugar
Split each sweet potato down the center long-wise, but not cut all the way through. Using 2 layers of heavy-duty aluminum foil, place each sweet potato on tin foil and fill with 2 tablespoons butter and sprinkle 1/4 of brown sugar on top of butter. Fold foil securely around each potato and twist ends to prevent butter from leaking out. Place potatoes in hot coals for approximately 1 hour or until soft. Unwrap the foil, place potato on a plate and pour melted butter and brown sugar back onto potato.
