Chili Con Queso Dip

Difficulty: Easy

Ingredients Add to grocery list

1 pound package Cheddar (recommended: Velveeta)
1 (16-ounce) can diced tomatoes, drained
1 (4-ounce) can diced green chiles
2 teaspoons Paula Deen’s Hot Sauce





In a medium saucepot, slowly melt Cheddar over medium/low heat. When cheese is fully melted add tomatoes, chiles, and hot sauce, stirring with spoon until combined well.  Pour cheese dip into a small casserole dish and serve as a dip for the cheesy empanadas or pour on top for a real cheesy effect.

Here in Texas, we skip the canned tomatoes and add fresh made pico de gallo! Much better taste. You can thin out the velveeta with either chicken stock or milk to your desired consistency.

Hi Paula and Family, Well you know what they say Paula, "whatever doesn't kill us makes us stronger". You are Blessed with a strong family and many loyal followers. I can no longer watch food network because as far as I am concerned they threw you under the bus. If those people were your friends you need no enemies. We have all spoken in anger many times and if everyone is held accountable for their mistakes we would all be out of a job. God is a judge not people who have also made many mistakes. Why don't they look to how many people you helped? I look for you online and utube if I need a recipe, I have deleted food network from my computer and will continue to do so. This is a favorite dip of my family & friends! We all love and respect Paula and her family. My wife and I went on a cross country road trip. Across the northern states to Maine and down to Florida and along the south and back home. We spent several days in Savannah and we went to the "The Lady & Sons" several times. It was great!

Put in 1/2 lb hamburger, 1/2 lb sage with garlic sausage 1 small can sliced black olives 1 can mushroom soup and 1/2 can milk with 1 lb Velveeta and you have something that will drive them crazy. Then I deep fry flour tortilla wedges until crisp and use them for dipping.
