1/3 cup butter
6 Chicken breast fillets, cut into 1 1/2-inch cubes
2 cups crushed sour-cream-and-onion-flavored potato chips
2 tablespoons milk
1 egg
Honey Mustard:
3/4 cup mayonnaise
3 tablespoons honey
2 tablespoons yellow mustard
1 tablespoon lemon juice or juice from 1/2 lemon
Horseradish, to taste
2 tablespoons orange juice (more or less as needed)
Preheat the oven to 350 degrees. Spread the crushed potato chips in a shallow dish. Beat together the egg and milk in a shallow bowl. Dip the chicken cubes into the egg mixture and then dredge them in the chips. Place the chicken nuggets on a baking sheet and drizzle with melted butter. Bake for 15 to 18 minutes, or until golden brown. The chicken nuggets can be frozen after baking. Serve with your favorite sauce, such as honey mustard or ranch dressing.
Honey Mustard:
Combine all ingredients except orange juice; stir well. Thin to pouring consistency for dressing or dipping consistency for dips with orange juice. Cover and chill for 2 or 3 hours.

Whole family loved these & they were easy to make. The second time I made them I did several batches & used various flavors of chips. I also use the honey mustard recipe for everything including salads. I have also cut chicken into strips but the nuggets are everyones favorite! No grease to fool with either. Love this recipe not only for the grandkids but for me too! Thank you Paula!

First of all, I have never tried a recipe that was not delicious. Thank you. I watched you visit to Dr. Oz show, and Paula my heart ached for you, on the smoking issue. Please know that I will lift you up in my prayers everyday, that God will give you the strength, courage, and grace to quit. You are such an amazing woman, one that I greatly admire. I love this simple recipe and my grandkids love the nuggets. As a switch I have used BBQ flavored chips and drizzled the chicken with a little honey bbq sauce which my husband loves. No grease to worry with, they are light and absolutely wonderful!!
