12 vanilla wafers
2 eggs
1 teaspoon pure vanilla extract
1 cup sugar
2 8-ounce packages cream cheese, softened
1 21-ounce can cherry pie filling or other pie filling
Preheat oven to 350 degrees. Place a paper cupcake liner in each cup of muffin pan. Beat cream cheese with a handheld electric mixer until fluffy. Add sugar and vanilla, beating well. Add eggs, one at a time, beating well after each addition. Lay a vanilla wafer, flat side down, in each muffin cup. Spoon cream cheese mixture over wafers. Bake for 20 minutes. Allow tarts to cool completely. Serve with cherry filling on top, or pie filling of your choice.

I saw you teach Rachel to do these and did them for our Mother-daughter tea at church. I'm doing them again this year. I use the food processor. Thickened with cornstarch,crushed pineapple is a good topping too. They look pretty on your tray. Pauline

This is a wonderful recipe and so easy. I have made it for bake sales and for friends and family everyone loved it. I did add a tablespoon of lemon juice to the recipe. My grandchildren like the single serve method that way they can just get their own desert. Thank you Paula for such a wonderful easy recipe.

Try your favorite jam/jelly/preserves to top this.
This has become a "family favorite" and I have used strawberry or raspberry jam for topping. However, the tarts are also yummy plain.
It's a great, quick, and yummy dessert to make. In fact, IMO, it's just as good..or even better...than those fancy tarts you find in a bakery and or a "catered affair". ![]()

I made a bunch of these last year for a super bowl party. They were so easy to make and you have limitless possibilities for toppings! I made cherry and blueberry (using pie filling). They were a hit- they were gone in no time! Everyone raved about them. They are delicious and you can whip them up in no time- you probably already have most of the ingredients!
