Ingredients Add to grocery list

4 (10-inch) flour tortillas
1 cup grated cheese, sharp Cheddar or Mexican blend
4 tablespoons butter
Sour cream, for garnish
Salsa, for garnish
Guacamole, for garnish

Directions

Lay the tortillas flat on a cookie sheet. Sprinkle some of the cheese on 1 half of each tortilla. Try not to get it too close to the edge. Fold the tortillas in half over the cheese to make a half-moon. Warm a skillet over low heat and add 1 tablespoon of the butter. Add the tortilla to the skillet and cook until it is lightly brown, about 2 minutes. Using a spatula, gently lift the edge so you can check. When 1 side is brown, turn the tortilla over and cook the other side until brown and the cheese is all gooey. Use a spatula to transfer to individual plates or a large platter. Repeat with remaining butter and tortillas. Top them with the sour cream, salsa and guacamole.

Cook’s Note: Ask your adult helper to help you to put the skillet on the cook top and turn the heat to medium.

I let my grandkids take the whole round tortilla and cover it with the grated Mexican four cheese blend, shreaded chicken, drained black beans, corn &/or diced red pepper. Place a second tortilla on top and place on a medium warm griddle. Lightly butter the griddle or spray with Pam for a crispier quesadillas. I also weight it down with a plate, and then flip it over after 2-3-4 mins...remove to a board and cut into pie wedges with a pizza cutter. Serve with sour cream & salsa for dipping. Fun with Gramma XOXOXO

This is a great recipe- but another take on it- Melt some butter in a non stick frying pan. On a soft tortilla, use either the liquid queso or shredded mexian cheese ( just a thin layer to act like a 'glue')to half of the tortilla- then add mexian seasoned ( whatever taco seasoning brand you prefer) to friend up gr. beef, ground turkey, or shredded chicken- in alyer on top of the cheese. Sprinkle some more shredded cheese either on top of the meat or spread some of the liquid queso on the other side of the tortilla ( so it can close like a book) then fry in the buttered skillet on each side til the outside of the tortilla is nicely browned. Can be served with sour cream spread on top- and or dipped in salsa.
