1 pint fresh strawberries, plus extra for garnish
2 ready-made light graham cracker crusts
3 (0.3-ounce) box sugar free strawberry jello
1 (12-ounce) container low-fat (1%) cottage cheese
1 (8-ounce) container frozen light whipped topping thawed
Put cottage cheese in a blender. Make 2 boxes of the Jello, using 1 cup of hot and one cup of cold water. At once, before it jells, add to cottage cheese. Blend until smooth. Pour evenly into crust and refrigerate until set. Cut up fruit and place on top of pie. Make up remaining package Jello per instructions on box. Pour it on top of fruit and put it in refrigerator until set. Put whipped topping on top. Garnish with more fruit.

Dear Paula I just love watching you on the food network and your food looks soo good; but the majority of what you cook, I can't eat beacuse I'm a diabetic. Do you have any receipes desserts and just regular foods for us diabetics thats taking insulin? Thank You Paula for your time and effort for answering our emails. Man, I saw this recipe on TV this week and thought it would be great for a BBQ Saturday. Very easy to make and delicious. No intense cheese flavor like another reviewer said. Looking forward to experimenting with other flavors! ![]()

This is superb! My husband and I are diabetic and this light, delicious and refreshing dessert is a wonderful addition to our menu. Thank you so much for sharing! It's so easy to make is very pretty, too. I'm going to try a peach one next and very soon!:)FYI: One pie is 3/4 c. cottage cheese and 1/2 cup hot & cold water for 1 box, then the regular recipe for the 2nd box.

I made this for Thanksgiving for my diabetic parents and found it too rubbery and too intense with the cottage cheese flavor. My dad tried it but I brought the rest home. I believe adding light coolwhip to the mixture would lighten it and wash out the intense cheese flavor. I won`t make this again it wasn`t as good as I thought it could be, perhaps it was how I made it! But it was like rubber, and just a disappointment.

This is a good recipe and figure friendly. I made this pie with sugar free peach jello and fresh peaches and is was wonderful.
