Difficulty: Easy
1/2 cup (1 stick) butter, softened
1 cup packed dark brown sugar
1/3 cup heavy cream, plus more as necessary
1 tablespoon pure vanilla extract
1 16-ounce box confectioner’s sugar
2 cups finely chopped black walnuts, for garnish (optional)
Melt butter in saucepan. Add brown sugar and cream. Cook over medium-low heat for about 2 minutes, until the sugar is dissolved. Remove from heat and add vanilla. Transfer to a large bowl.
Using a handheld electric mixer, beat in confectioners’ sugar until smooth. If frosting is too thick, add 1 tablespoon heavy cream at a time until consistency is right.
This was the second recipe today that I used for caramel icing and the opposite of the first one -- which failed miserably and cost me 2 boxes of brown sugar. Super easy, super delicious and no fail!!!! And you could use it on ANY kind of cake and it would be delicious. It is very sweet -- but hey this caramel icing-- what do you expect!!

This frosting was super easy to make! My husband loves caramel so I made a cake using this as the frosting, and he (and I too) greatly enjoyed it! I would definitely make this again (maybe with cupcakes next time- yum!)

Caramel Cake is my son's favorite cake so I decided for his 17th birthday,to make a Carmel Cake from stratch and used Paula Deen's Frosting recipe . Not only is this receipe easy to make, it taste absolutely fantastic. I will never purchase another Caramel Cake. My son and his two friends age the entire in 20 minutes. You have got to try it!! Its is not just good, it absolute fantastic and is the best Caramel Frosting I've ever tasted. Going to make another this weekend!! Thanks Paula for this only.

This frosting was absolutely delicious. I used it with a box white cake (too lazy to make the entire cake from scratch). I made no modifications to the recipe and got so many compliments. ONCE AGAIN, THANKS PAULA!
