Difficulty: Easy
1/2 cup (1 stick) butter, softened
1 cup packed dark brown sugar
1/3 cup heavy cream, plus more as necessary
1 tablespoon pure vanilla extract
1 16-ounce box confectioner’s sugar
2 cups finely chopped black walnuts, for garnish (optional)
Melt butter in saucepan. Add brown sugar and cream. Cook over medium-low heat for about 2 minutes, until the sugar is dissolved. Remove from heat and add vanilla. Transfer to a large bowl.
Using a handheld electric mixer, beat in confectioners’ sugar until smooth. If frosting is too thick, add 1 tablespoon heavy cream at a time until consistency is right.

Very pleased, just made a cake for my husbands bday tomorrow. I used the caramel frosting recipe and it is very good caramel is his favorite soooo! Easy to make. very sweet but here is a tip, i added a pinch of salt to the frosting and made it salted caramel and it is really good does not take away from just makes it better and take away some of the sugary taste try it.

Disappointed in the taste!! It didn't at all taste like caramel frosting I grew up with. It was still good I used it on the cake anyway. But I wanted the caramel taste. This recipe was not it. Thanks anyway!!

Hi Paula, I love your caramel frosting. This was my first year trying it. A new Thanksgiving tradition. My mom said it's the best frosting that she's tasted in 20 years! I know we can't eat everyday, but it is awesome on a cream cheese poundcake

Just made this... SOOOO delish. Only complaint is that it is very oozy - wouldn't be a problem if you were spreading it on a cake with a knife, but I was trying to pipe it onto cupcakes. In order to keep the swirly shape, I had to add a lot of powdered sugar, so much that it hurt my hands to pipe on - and I'm sure the frosting will get all hard very soon. Guess we'll just have to eat them fast

My husbans loves caramel icing and I mad it last year for his birthday. I couldn't find the recipe I used last year, so I searched the internet and found Paula's. I don't know why, but this recipe tasted like confectioner's sugar..not much caramel flavor. I threw it out. The recipe I ended up making was very similar....milk instead of cream and 3 cups of sifted sugar instead of 16 oz. and no vanilla. I alsooooo let it cool for 20 minutes after coming off the stove before adding the 10X sugar. Still don't understand whay the big difference in taste~ It WAS easy to make though.

This was the second recipe today that I used for caramel icing and the opposite of the first one -- which failed miserably and cost me 2 boxes of brown sugar. Super easy, super delicious and no fail!!!! And you could use it on ANY kind of cake and it would be delicious. It is very sweet -- but hey this caramel icing-- what do you expect!!

This frosting was super easy to make! My husband loves caramel so I made a cake using this as the frosting, and he (and I too) greatly enjoyed it! I would definitely make this again (maybe with cupcakes next time- yum!)

Caramel Cake is my son's favorite cake so I decided for his 17th birthday,to make a Carmel Cake from stratch and used Paula Deen's Frosting recipe . Not only is this receipe easy to make, it taste absolutely fantastic. I will never purchase another Caramel Cake. My son and his two friends age the entire in 20 minutes. You have got to try it!! Its is not just good, it absolute fantastic and is the best Caramel Frosting I've ever tasted. Going to make another this weekend!! Thanks Paula for this only.
