Caramel Apple Cheesecake

Ingredients Add to grocery list

1/4 cup caramel topping
2   eggs
1/2 cup sugar
1/4 teaspoon vanilla extract
2   8-ounce packages cream cheese, at room temperature
1   9-inch graham cracker crust
1   21-ounce can apple pie filling
12   pecan halves, plus 2 tablespoons chopped pecans





Preheat the oven to 350 degrees.

Reserve 3/4 cup of the apple filling; set aside. Spoon the remaining filling into the crust. Beat together the cream cheese, sugar, and vanilla until smooth. Add the eggs and mix well. Pour this over the pie filling.

Bake for 30-35 minutes, or until the center of the cake is set. Cool to room temperature.

Mix the reserved pie filling and caramel topping in a small saucepan and heat for about 1 minute, or until spreadable. Spoon the apple-caramel mixture over the top of the cheesecake and spread evenly. Decorate the edge of the cake with pecan halves and sprinkle with chopped pecans. Refrigerate the cake until ready to serve.

Have never made a cheese cake from scratch. thought it would be too hard. This was so easy and soooooooooooo good. My daughter said it was the best cheese cake she has ever had and she goes to "Cheesecake Factory" a lot. So sorry about all the trouble you have been going through. Sometimes we wonder why life has to be so hard, but things will get better. Just lost my husband few months ago, so I know how hard...Things are getting better.. Keep your chin up.

Mrs. Deen, I know that this has nothing to do with this delicious recipe. Just wanted to say I love all of your recipes. Some of the foods that you make I haven't seen since my grandmother passed. God Bless her. She was from Tennessee and would make some of the most delicious treats. I’ve tried to emulate her recipes for the longest time. My children and their friends love the bread and cookies that she taught me to make. The funny part of her teaching was there were no measuring cups involved. I’ve spent a lot of time putting her teachings on paper…lol. I found a few ideas on how to do that on your cooking show. I just want to thank you for everything you do on the show and for showing me that butter isn’t all bad after all… A really big fan Forrest.

I was recently residing in Sacramento California and I entered a bake off contest at work. The contest was dessert only so I began to look up recipes that would be simple to follow but would have an amazing taste. Also I wanted it to taste so good, that it would make people think I had been in the kitchen all day. So I found this recipe and it is Amazing! Not only is it easy to follow, you won't have much to clean up, and the taste is out of this world. Anything with caramel, pecans, and cheesecake has to be awesome. I won second place in the bake off. Now the recipe has changed because it used to be 1 cup of sugar and now I see it is 1/2 cup of sugar. The carmel topping along with the sugar can make it too sweet, so make sure you follow the recipe to the "t" because you don't want it to me too sweet. The only caramel sauce I found was by "smuckers" and it is super sweet. Perhaps instead of just using plain apple pie filling, you can try the caramel apple pie filling. Maybe you can do without the caramel sauce on top, maybe I will try it and let you all know. But the recipe is perfect as is. Please try it, It is perfect for holidays or just for having some friends over.

Hey Paula! I work at an elderly retirement village, and I made your caramel apple cheesecake for the residents. It was a big hit! So....I decided to enter it into the local pie-baking contest. I was watching your show on cousin Johnnie's cheese cake. I watch you step by step.I went to your web site and you said to cover roasting pan lightly with foil, but you did not do that on the show.How come whenever I go to the website there is always a step or two that is either not shown on the show or It's done differently. Dear Mrs. Paula: I am not much of a cook (frying, grilling, broiling etc) but thanks to you and your recipes I can say that I am a baker. I have baked two of your cakes and let me say they made me famous. My fiance Lamar and my family are in love with the caramel cheese cake and rum cake recipes. They always ask me to bake them for special occasions as for Lamar that is everyday and I simply enjoy the reaction and of course the taste of your most delicious creations and I just want to say thank you for the easy to follow directions. Had not been for that I wouldn't have the confidence to try and venture off from baking but actually cooking for my fiance, our daughter Layla, and the rest of my family. Lamar and I are tying the knot next month and if we ever make a trip to Georgia, we will make sure to stop at your restaurant for some good down home cooking. This is a totally awesome cheesecake, and super easy to make. All my friends were impressed with my culinary skills, which I gave due credit to Paula - my new BFF. I made this recipe with canned strawberry pie filling and drizzed chocolate crackel syrup over it for my husbands 50th B-day. That too was to die for!!
