2 (16 oz.) bag frozen butter beans
1 cup carrots (slices)
1 large onion, chopped
1 stalk celery s sliced
5 cups chicken stock
1 cup milk (warmed)
Salt and pepper to taste
1 pound smoked ham, diced
In a large soup pot sauté onion, carrots, celery salt and pepper until tender. Add chicken stock and bring to a boil. While stock is boiling add frozen butter beans and bring down to a simmer. Cook for 20 minutes, covered. While butter beans are cooking put smoked ham in a sauté pan until just brown on edges and set aside. After butter beans are cooked thoroughly, puree in blender or immersion blender. Once pureed add warmed milk and blend well. Add smoked ham and serve.

What do you do if you cant find 2 (16 oz.) bag frozen butter beans? Can I use cans drained, what would you suggest?

My family loved your Butter Bean soup; I used 2 stalks of celery instead of 1 stalk, added 2 chopped hard boiled eggs & used half & half instead of milk. Soup was very creamy & thick. (we northern folks like to use hard boiled eyes in our soup). When I make a new dish for dinner my husband remarks "it must be Paula Deen night". Love you and your family!

I think you are a hoot !!! Wonderful cook,and a very pretty lady.I have so many of your cook books and also your sons.Love them . I use them all the time. I also like having you as my friend on facebook. I do try your recipes. The problem is I never find one that I don't like. Keep cooking !!!!Your son's veggie soup will be in the pot tomorrow thanks bunches.
