1 lb butter
1 teaspoon garlic powder, or 2 teaspoons fresh minced garlic
12 fresh oysters on the half-shell
Freshly grated Parmesan
French bread, or breadsticks, for serving
Preheat a charcoal grill.
Put the butter in a pot on high heat and bring to a boil. Make clarified butter by scooping all of the foam that rises to the top and discarding it. Add garlic powder or fresh garlic to the butter.
Put oysters on an open flame grill and sprinkle Parmesan over top, making sure not to completely cover the oysters. Let them cook until the cheese starts to brown, about 2 to 3 minutes. Then drizzle the garlic butter generously over the oyster, cook another 1 to 2 minutes and remove from heat. Serve immediately with extra butter, if desired, and with bread or breadsticks.

We have an employee who also works for the local fisheries, on Fridays he buys us a container of oysters and brings to to us. I picked up 2 muffin pans (cheap & steel) at Dollar General for a buck apiece. I have oysters on the grill in them as I type. Can't wait. On one I put chopped roasted red peppers , a couple fennel seeds and chop onion and pressed garlic...and covered w/ a bit of cheese and a bit of good hard Parmesan ... on the other I put the onion/garlic mix plus lime juice, salt pepper and I put a pat of butter. I threw some damp wood chips over the charcoal and closed the lid. Thanks for the inspiration !

Mom and I love all grilled oysters but by far the best is the ones with parmesan cheese. We get them whenever we go to Mobile's Osyter Bars. I can not shuck them that well so we have took the shells home from the bar and boiled,cleaned and re-use them. I think we will try them in a muffin pan tonight on the grill or oven. I live in the northwest and one of my husbands friends makes a variation of this but he uses pepper jack cheese and jalapenos instead of garlic and parmesan. they wolf it down. they will go through a bushel of ousters in a matter of minutes between the three of them.

We went to your restaurant in Savannah and had lunch which was wonderful and then we went to Uncle Bubba's for dinner which was wonderful. At Uncle Bubba's we had the chargrilled oysters and my husband and myself fell in love with them. How do you get the charbroiled taste? Can you give us any pointers as to how to perfect them. Uncle Bubba's Oyster House was always THE place for us to stop in Savannah. The chargrilled oysters were a must-have appetizer along with the shrimp dip. MMMMMM my mouth is watering when I think of them both!

I LOVE these oysters! Usually I am just an oysters on the half-shell kind of girl, but on a school trip to Hilton Head we ate at Bubba's and I fell in love with these oysters. I have been raving about them ever since(like 2-3 years)and never thought I'd see a recipe for them. Thank you so much for sharing! I was raised in Louisiana but now live in Missouri and so miss Southern-comfort food and FRESH seafood. I thoroughly enjoyed visiting your cities and both of y'alls restaurants. WOW! These oysters were great! I normally eat fried oysters, but when my husbands order came out I couldn't help myself. I had to try these and WOW! These are my favorite now. I guess I'll be traveling to Savannah, GA to eat at Uncle Bubba's from now on! I'll be ordering Bubba's Chargrilled Oysters!
