Ingredients Add to grocery list

8 skinless boneless chicken thighs, trimmed of all visible fat (about 1 1/2 pounds)
1/2 teaspoon Paula Deen’s House Seasoning
1/4 cup light mayonnaise
Zest and juice of 1 lemon
1 egg white
1/2 teaspoon hot sauce
1 1/4 cups cornflake crumbs

Directions

Preheat the oven to 375 degrees. Spray a large shallow baking pan with nonstick spray.

Sprinkle the chicken with the House Seasoning. In a large bowl, combine the mayonnaise, lemon zest, juice, egg white, and hot sauce. Add the chicken; toss to coat.

Place the cornflake crumbs on a sheet of wax paper. Dip the chicken into the crumbs pressing so the crumbs adhere. Place the chicken in the pan and lightly spray with nonstick spray.

Bake until the chicken is golden brown and cooked through, 40 – 45 minutes. Do not turn.

Bobby and The Test Kitchen Notes:  Although we all enjoyed this much lighter version and we hope you make it again and again, we decided there is something about an old fashioned fried chicken recipe.  You just don’t mess with it…we unanimously decided we would rather just eat fried chicken a little less frequently the way it was meant to be prepared.

Love your cooking even if it has a lot of butter. My son in law is diabetic type 2 and he loves your cooking. Keep up the made over recipes for diabetics, I am having a good time making them and now there is peace in the home again

The chicken was good but the breading didn't stay on to well! I also added the "house seasoning" to the cornmeal mixture. I also burnt my hand! 8) First time ever while cooking! I love Paula and the Deen boys but I think I'll stick with the old fashioned fried chicken in the grease!

Paula, I've eaten at your restaurant and I loved it!! However, I have just found out in the last month that I too have Type 2 Diabetes. I am controlling it with diet and excercise and hopefully losing a few pounds. I am so sorry that people have such mean things to say about you "hiding" it. I totally understand trying to get used to it and and change your lifestyle. Besides, it's YOUR business and if you chose to, you didn't have to tell everyone at all. You are a very special lady and I just love you and your family. I would love to see a cookbook come out with receipes for that are very low in carbs for us. Great recipe. I added a few extra spices to my dip mixture. I also added some spicy mustard to give it some extra kick. I used boneless chicken and it took about 30 minutes. Very easy dinner and super tasty. Definitely adding this recipe to my list of favorites!! Recommend trying.
