2 teaspoons olive oil
1 onion, chopped
1 (7-ounce) container baby spinach
2 large eggs
2 egg whites
1/2 cup low-fat (1%) milk
1 cup part-skim ricotta cheese
1/2 teaspoon salt
1/8 teaspoon cayenne
Pinch nutmeg
1/2 cup reduced-fat shredded Swiss cheese
3 slices bacon, cooked and crumbled (about 2 tablespoons)
Preheat the oven to 375°F. Spray a 9-inch glass pie plate with nonstick spray.
Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and cook, stirring occasionally, until tender, about 5 minutes. Add the spinach and cook, stirring, until the spinach is wilted and any liquid is evaporated, 2 – 3 minutes.
Whisk the eggs and egg whites in a large bowl until lightly beaten. Whisk in the milk, ricotta, salt, cayenne, and nutmeg until blended. Stir in the spinach mixture, cheese, and bacon until well combined.
Pour into the prepared pie plate. Bake until the top is golden and a knife inserted into the center comes out clean, 35 – 40 minutes. Let stand 10 minutes before slicing.

This quiche was the first I had ever made so I was really excited to try it. Super easy and inexpensive! Its light and fluffy, but feels up your stomach without leaving you feeling stuffed. My family really enjoyed it and husband had seconds! It was perfect!

Perfect for a gluten free meal. Made this for dinner 4/19/2011. It was wonderful! I did use pre-cooked bacon, quick mircrowave warmed up on it, paper toweled off any extra grease and then crumbled up. It was a great way cut down on grease. Dish cooked perfectly and didn't miss the crush at all. The quiche turned out perfect. I served it with 3/4 cup sliced fresh strawberries(sprinkled 1 packet of equal) on each plate. Made a wonderful combination. I will make it again & soon! Highly recommend this one for anyone who has to eat gluten free or is trying to cut fat calories. Family told me it was the best quiche I'd ever made for them. Sliced it up into six pieces and there were no leftovers at all!! ~A.S. Johnson

I have found that if you start hi-liting from the end of the recipe up to the work “ingredients” then right click and copy then you can paste to your document, this will only copy the words, no ads. Oh, then you have to go to the top of your document (above the word ingredients) and put the recipe name above.
