Ingredients Add to grocery list

2 teaspoons olive oil
1 onion, thinly sliced
2 garlic cloves, minced
1 medium zucchini, cut into thin strips
2 tablespoons all-purpose flour
2 cups fat-free milk
3/4 teaspoon salt
1/4 teaspoon pepper
Pinch ground nutmeg
1 (20-ounce) package refrigerated shredded hash browns (we used Simply Potatoes™)
2/3 cup reduced-fat shredded Cheddar cheese
6 multi-grain club crackers, coarsely crushed
2 teaspoons melted butter

Directions

Preheat oven to 375°F. Spray a 7 x 11-inch casserole dish with nonstick spray.

Heat the oil in a large nonstick skillet over medium-high heat. Add the onion and cook, over medium heat, stirring occasionally, until very tender, 6 – 8 minutes.  Add the zucchini, and garlic and cook, stirring until the zucchini is softened, 3 – 4 minutes. Add the flour, stirring to combine. Add the milk, salt, pepper, and nutmeg; bring to a boil. Reduce the heat and simmer, stirring occasionally, until the mixture begins to thicken, about 5 minutes. Stir in the potatoes until well mixed. Spoon the mixture into the casserole dish. Combine the cheese, crackers, and butter in a small bowl. Sprinkle over top. Bake, uncovered, until the filling is hot and the cheese is melted and bubbly, about 40 minutes.

I am so glad I found this website. Now I can go from heavy, sugar, salt soaked food; to foods that are light and tasty. Foods taste better when they are cooked with lighter additions. I'm anxious to try some more good things like Bobby lighter carrot cake. I too am diabetic. Thank you very much.

I was so glad to find this websight.I have been a fan of food network and all it's cooks for many years.I was always impressed by you Paula,your story about how you started and were able to raise your two boys on your own.My husband is a diabetic heart patient,he had open heart surgery last year.I have always cooked from scratch.I am proud that I have modified many of his favorite dishes.I can even make a great shepards pie with veggie ground round.It has been a journey to change a dish and make it better. I grow my own herbs always try to add fiber use olive and grapeseed oil together to get a higher flashpoint when sauteeing etc.Food is about comfort and where we come from for many people,I was happy to see Bobby,s lighter recipies on this websight.Good-Luck on your new journey,stay strong,your personality will shine through!We still love ya PaulaDean!

I love all of Bobby's lighter versions of his mom's great recipes. He keeps all of the flavor while cutting out those important calories! When may we see a cook book of these lighter versions? By the way, we visit Savannah as often as we can, and The Lady and Sons is one of our favorite places. So is Bubba's place. We've made a lot of wonderful family memories at both. Thanks so much!!!
