Ingredients Add to grocery list

2 cups cooked cubed chicken
2 cups frozen mixed vegetables
1 cooked cubed all-purpose potato
2 (10 3/4-ounce) cans fat-free cream of mushroom soup
1/2 cup fat-free milk
8 (12 x 17-inch) sheets thawed frozen phyllo dough





Preheat the oven to 375°F degrees.

Combine the chicken, mixed vegetables, and potato in a large bowl. Stir in the soup and milk until well blended. Ladle about 1 1/4 cups chicken mixture into each of 4 ovenproof bowls. Place bowls on a jelly-roll pan. 

Stack the phyllo sheets. Roll up, starting at a long side, then cut into 1/2-inch strips. Place the strips in a large bowl tossing to separate the strips. Spray the strips with nonstick spray and arrange over the chicken mixture. Lightly spray the tops with nonstick spray. Bake until the filling is hot and the phyllo is browned, 25 – 30 minutes.

My husband doesn't like anything with mushrooms so I made cream of chicken soup (didn't have it in the pantry)with the broth from cooking a whole chicken and cut stips of pie crust because I didn't have the phyllo dough. Made chicken noodle soup with the broth of the chicken, too, and used the rest of the chicken in the chicken noodle soup. My fault that I didn't let the cream of chicken soup cook long enough to thicken as it should have, so the first night we had this it was too soupy but when I warmed it in the microwave a day later, it was delicious! Thanks, Bobby,for this great recipe -- it was really good on a cold winter night in Georgia!

I was so happy to find a low fat chicken pot pie recipe that I went out immediately and bought the ingredients. (I was pleasantly surprised when the fat free cream of mushroom soup was tasty,however I'm going to make it next time with fat free cream of chicken soup) I did however use fresh vegetables) It was DELICIOUS. I've watched your show for years, however can no longer eat high fat foods so I was very happy to see your boys making the same good tasting recipes that are low fat! THANK YOU!

Sounds great and the calorie content is excellent; however, you're still killing us with the sodium content. Individuals with blood pressure issues and kidney problems cannot handle all this sodium. Any suggestion on how to lower the sodium?

I loved this recipe but several in my family did not like the crust. I think it was just no what they were expecting.

I really dislike frozen vegetables. The texture is really strange and I think they lose a lot of flavor. I think canned are far more flavorful, but it’s not that hard to cut up some fresh vegetables for this and pre-cook them. If you’re going to go to the trouble of making pot pie (instead of getting a store-bought one) take the extra time to make the veggies good.
