Servings: 6 (5 cups)
Prep Time: 15 min
Cook Time: 35 min
Difficulty: Easy
2 cups dry no-yolk noodles
2 teaspoons olive oil
1 (8-ounce) package mushrooms, sliced
1/2 red bell pepper, seeded and chopped
1/2 teaspoon salt
1 (7-ounce) package baby spinach
1 (10 3/4-ounce) cans fat-free cream of mushroom soup
1 cup water
2 cups chopped cooked chicken
3/4 cup grated sharp Cheddar cheese
2 tablespoons slivered almonds, toasted (optional)
Prepare noodles according to package directions; drain.
Preheat the oven to 350° F. Spray a 1-quart baking dish with nonstick spray.
Heat the oil in a large nonstick skillet over medium-high heat. Add the mushrooms, bell pepper and 1/4 teaspoon salt. Cook, stirring occasionally, until tender, about 5 minutes. Stir in the spinach and cook, stirring, until the spinach is wilted, 2- 3 minutes.
Combine the soup and water in a small bowl until blended. Add the soup, chicken, and cooked noodles to the skillet; heat through. Spoon the mixture into the baking dish. Sprinkle with the cheese. Bake, covered, until the cheese is melted and the mixture is bubby, 20 – 25 minutes. Sprinkle with the almonds, if using.

I truly want to lose 30 pounds like Paula did. I need all the help I can get.

This was gross and it tasted just like cream of mushroom with noodles... I was highly upset about the outcome.
By Jamie on July 26, 2011
This was really bad... I followed the recipe exactly and I was not a happy camper.. It looked really good but it tasted like cream of mushroom soup. I dumped it down the garbage disposal after my 3 year old refused to eat it. And he is a kid that eats just about any thing and he did not like it at all. I was really disappointed in this recipe because I read the reviews and I was excited about cooking it I will not be doing it again.

Excellent! I made it for my family tonight and even my diet crazy daughter ate it! Yea!

We had this dish for supper tonight, and it was absolutely WONDERFUL! My husband and I both love it - I don't think I'll have to worry about throwing away leftovers
Thank you for a delicious & healthy meal!

Bobby, thank you so much for the lightened up recipies. I have just been told that I am pre-diabetic and have to loose some weight and start watching my calorie and Carb intake. I also am doing a Weight Watchers program along with this and the fact that you give all the nutritional information is wonderful. I can figure my POINTS and have a great dish! Thanks again and please continue to convert some of your Mom’s (love Paula’s stuff)favorite recipies for those of us that can’t enjoy the “REAL THING” often.
