1/2 pound green beans, trimmed and cut into 1-inch pieces
2 teaspoons olive oil
1 (8-ounce) package cremini mushrooms, sliced
1 onion, thinly sliced
1 red bell pepper, thinly sliced
1 (10 3/4-ounce) can condensed fat-free cream of mushroom soup
3/4 cup lowfat (1%) milk
2 cups cooked cubed chicken
1 (8.8-ounce) package cooked long grain and wild rice
1/2 teaspoon salt
1/2 cup French fried onions

Directions

Preheat the oven to 350°F. Spray a 1 1/2-quart baking dish with nonstick spray.

Bring a large saucepan of lightly salted water to a boil. Add the beans; return to a boil and cook until just crisp-tender, 3 – 4 minutes. Drain.

Heat the oil in a large nonstick skillet over medium-high heat. Add the mushrooms, onion, and bell pepper. Cook, stirring occasionally, until lightly browned, 6 – 8 minutes.

Whisk together the soup and milk in a small bowl. Add the soup mixture to the mushroom mixture, stirring until the mixture comes to a boil. Remove from the heat. Stir in the beans, cooked chicken, rice, and salt. Spoon into the baking dish. Sprinkle the fried onions over the casserole and bake, uncovered, until the casserole is bubbly and the top is golden, 20 – 25 minutes.

This would be perfect if you could lower the sodium big time. It's just not the calories that hurt you for slot it's the sodium. Would love to make this for school lunch

I love Paula's recipes and saw the original recipe for this meal, but there are a few things in it taht I don't like. This recipe sounds awesome (by substituting a different kind of soup and take out the mushrooms). I can't wait to give it a try! Too bad Bobby's show is not available in our area!

I just have to say that this recipe was absolutely delicious and that I can't wait for the leftovers tomorrow! I thought while making it that there might not be enough flavor and was tempted to add some of Paula's house seasoning but I refrained. . .It turned out perfect! I just want to say again.....i had sent a note previously.....i'm so excited to try these lighter recipes. Since I started weight watchers, I'm so happy to be able to use some of these great recipes! With the new calculator they give you, using the nutrition info you give us, makes it so easy to figure out what our points are. Paula, these recipes are really great.......please thank Bobby! Keep the recipes coming!! When I was at my weight watcher meeting and they asked, what web sites is everyone using to get recipes....well....when i said Paula Deen...everyone just looked at me..and I proudly said....YES, Paula Deen....lol!! I should have kept it my secret....oh well, it's right to share!! Thank you.

Love the idea of lighter recipes, have not tried any as yet but they should come in handy as I am following a low kilojule eating life style. Every once-in-a-while I can give myself and the family a treat by cooking one of your recipes. Thank-you!

The original recipe (not the light) did not sound appealing to me; however, this one sounded great. I made it last night and left out the bell pepper. It was so good! The fried onions really took it to another level. I highly recommend this casserole!

Sounds good - haven’t tried it yet but will tomorrow night.  COuld you put a print link in so that we don’t have to print the whole thing just to get the recipe?  Just a helpful thought.  Had to print 3 pages just to get the recipe that would fit on one page.  THere is probably another way to do this but I don’t know how.
