Ingredients Add to grocery list

2 cups cake flour
2 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 large eggs, at room temperature
2 egg whites, at room temperature
1/2 cup sugar
1/2 cup apple butter
1/4 cup canola oil
2 cups grated carrots (about 3 carrots)
1 (8-ounce) can crushed pineapple, drained

1 (8-ounce) package reduced-fat cream cheese (Neufchatel)
1 1/2 cups confectioners’ sugar
1/4 cup plain Greek-style yogurt
1 tablespoon grated lemon zest
1 tablespoon lemon juice
3/4 teaspoon vanilla extract
1/4 cup chopped pecans





Preheat the oven to 350°F degrees. Spray two 8-inch round cake pans with nonstick spray. Line with wax-paper rounds; spray with nonstick spray.

Combine the flour, baking powder, cinnamon, baking soda, and salt in a medium bowl.

Beat the eggs and egg whites in a large bowl using a hand mixer until thickened, about 2 minutes.

Gradually add the sugar, beating until light and fluffy, about 2 minutes. Beat in the apple butter and oil just until blended. Add the flour mixture and beat just until blended.

Stir in the carrots and pineapple.

Divide the batter evenly between the pans. Bake until a toothpick inserted into the center comes out clean, 30 – 35 minutes.

Let cool in the pans on racks 10 minutes. Invert the layers onto racks and remove the wax paper; let cool completely.

For the frosting: Add all ingredients, except nuts, into a medium bowl and beat until fluffy using a hand mixer.

Place 1 cake layer on a serving plate. Spread 1/3 cup of the frosting over the layer. Top with the remaining layer. Spread the remaining frosting over the top and side of the cake. Sprinkle with the nuts.

I tried this today. The cake part was easy, the icing was horrible. I went back to an old tried and true recipe to finish this off. Sad to say for an "easy recipe" that is supposed to take 35 min., it was frustrating and took me 2 hours, due to the icing, before reverting to something else. I'm an experienced cook and thought this would be a good learning experience for my teenaged daughter. We did learn...not all recipes work even when you follow the directions.

This is a good move on Paula's part. I was disppointed to learn that she is a diabetic but keeps right on using plenty of butter and sugar in her recipes. What a service she could have done in those three years when she was debating how to handle that news. It took me about 5 seconds to decide that, in her shoes, I would have done everything possible to change cooking habits, told the public that I was diabetic, and included some best dishes for them too. That's because I have a daughter who is a diaabetic.

Bobby: This was not a winner. I followed the recipe exactly, and the cake was too dry and dense. Also, the frosting was a complete disaster. It was so liquid that if I had put it on the cake it would have slid right off.
