Recipe Courtesy of Paula DeenTry this “off the beaten path” recipe when you want something different as a soup.

crisp crumbled bacon
1/4 cup sour cream
1 cup heavy cream
1/4 cup mayonnaise
1 cup diced fresh tomatoes
1/8 teaspoon grated fresh nutmeg
1/8 teaspoon ground red pepper
3 1/2 cups fresh or canned chicken broth, heated to a simmer
1/2 cup instant-blending flour
3 cups iceberg lettuce, julienne
2 tablespoons butter
1/2 cup diced green onions
5 slices bacon, diced small
In a 3-quart pot, cook the bacon over medium heat till lightly browned. Add the onions and cook, stirring, until wilted. Add the butter and stir until melted. Add the lettuce and saute for 2 minutes. Sprinkle the flour into the pot, then stir it in until well blended. Remove the pot from the heat and add the hot chicken broth, tomatoes, nutmeg and pepper. Heat the soup to boiling, stirring constantly, then reduce the heat and simmer gently for 5 minutes. Add the cream and mix well. Mix together the mayonnaise and sour cream.
Serve each portion of soup with a dollop of mayonnaise mixture topped with crumbled bacon.

There are ways to lighten this up .... lower fat sour cream and mayo. No one is eating this thinking it's a diet dish. Do what you can to lower the fat, and enjoy it without whining!

This soup was very good. I wouldn't make it more than once a year though because it's extremely UNHEALTHY!! This soup is a cardiologist's nightmare. I don't understand why everyone else who commented on here seems to think that it's healthy... Low carb does not mean healthy, it only means low carb! Bacon grease, butter, heavy cream, mayonnaise, sour cream, bacon, flour..... All of these things are bad for you!!! The only healthy parts were the lettuce, tomatoes and spices! lol Great taste though ![]()

I love, love, love this soup! It seriously tastes like a delicious, warm blt sandwich, just in soup form! I make it about twice a month for my husband and I. One of my daughters likes it too! I'm going to be taking it to a M.O.P.S. meeting this month too so I can share it with my friends who also love Paula Deen!

This recipe is AMAZING.. I made it for my partner and I yesterday and I loved it but one little thing that i added to it was season salt and fresh ground pepper.. next time i was thinking about adding just a little more bacon for the grease or even chicken.. but this was awesome as is also.. i really recommend this recipe!!

This soup is crazy good!!! My hubby LOVES it. We crumble up saltine crackers in it and that gives the soup a toasted bread taste mixed in. Yum Yum.
