Servings: 6–8 servings
Difficulty: Easy

Ingredients Add to grocery list

5 plum tomatoes, seeded and chopped
1 seedless cucumber, chopped
1 green bell pepper, chopped
1 cup frozen corn, thawed
1 cup frozen black-eyed peas, blanched
1/2 cup halved pitted kalamata olives
1/2 cup sliced red onion
1/2 cup Greek vinaigrette dressing


1. In a large bowl, combine tomatoes, cucumber, bell pepper, corn, black-eyed peas, olives, and red onion. Add vinaigrette, tossing gently to combine. Cover and chill, or serve immediately.

I just found your site and have missed you very much on Food Network and Am not watching that channel any more. Not at all interested since you are not scheduled. They have lost a lot in their stupid decision to cut your shows. I remember the first shows I saw you. You traveled to peoples homes, unexpectedly, and cook a great meal with only what they had in their house. Loved that show and glad you didn't come to my house. I hardly ever have anything to cook cause I like to shop pretty often. Lord help me if it snows and I don't know it's coming.
