5 strips bacon
1 cup onion, diced
2 cans Boston-style baked beans
1 cup Granny Smith apple, diced
1 tablespoon prepared mustard
1/4 cup brown sugar
1 teaspoon salt
Preheat the oven to 350 degrees. Coat a 2-quart baking dish with nonstick cooking spray. In a large bowl, combine all the ingredients except bacon and mix well. Pour into covered baking dish and lay raw strips of bacon on top. Bake for approximately 45 minutes or until thick and bubbly. Uncover and bake for 5 more minutes.

I have a tried and true recipe for baked beans that I have used for decades -- but I really wanted baked beans but did not have the time I needed. Came across this recipe -- a moment of serendipity for sure -- loved this combo of apple and beans. They were a wonderful addition to our meal. Thanks for sharing this recipe.

Paula, I don't have a comment about your recipes, I have a joke for you. Do you know the difference between a northern zoo and a southern zoo? A northern zoo puts the names of the animals on the cages. A southern zoo puts the names of the animals and the recipe.
