1 (16-ounce) bag coleslaw mix
1/2 cup plus 2 tablespoons mayonnaise
1/2 cup golden raisins
1/2 cup thinly sliced scallions, white and light green parts
1 lemon, finely zested
1 teaspoon freshly squeezed lemon juice
1/2 teaspoon salt
3/4 teaspoon freshly ground black pepper
In a large bowl, combine the coleslaw mix, mayonnaise, raisins, scallions, lemon zest, lemon juice, salt, and pepper. Toss well before serving.
