2 cups water
1 cup sugar
¼ cup minced fresh ginger, plus more for garnish
¼ cup mint leaves
2 cups freshly squeezed lemon juice
1 liter cold seltzer
Combine water, sugar, ginger, and mint in a medium saucepan and bring to a boil. Cover, remove from heat, and allow to steep until room temperature. Strain out solids and discard. Add ginger syrup to a pitcher and stir in lemon juice and seltzer. Serve over ice and garnish with mint.
