1/2 cup mayonnaise
2 teaspoons curry powder
1 tablespoon lemon juice
4 cups cooked turkey, diced
1/2 cup toasted pecans, chopped
1/2 cup dried cranberries
1/2 cup scallion green and white parts, chopped
salt and pepper to taste
In a large mixing bowl stir the mayo, curry powder, and lemon juice until smooth.
Add the turkey, pecans, cranberries, and scallions. Gently fold to combine.
Season as desired with salt and pepper.
