Date-Nut Sticks


Ingredients:
  • 1 1/2 sticks butter
  • 2 eggs, beaten
  • 2  cup  sugar
  • 1 8-ounce box chopped dates
  • 1  teaspoon  pure vanilla extract
  • 1  cup  chopped pecans
  • 1 1/2  cup  rice cereal (recommended Rice Crispies)
  • 3  cup  finely grated coconut
Directions:

In a saucepan over medium heat, melt butter. Add eggs, sugar, and dates. Bring to a boil, reduce heat to low, and cook 10 minutes, stirring constantly. Remove from heat. Stir in vanilla, nuts, and Rice Crispies. Cool and shape into finger-sized sticks. Roll in coconut.

Yield: 45 sticks
Prep time: 15 minutes
Inactive prep time: 5 minutes
Cook time: 10-12 minutes
Ease of preparation: easy
