Ingredients:

cans very young early peas (only Lesueur), drained
- 1/4
cup
chopped onions
- 2
boiled eggs, crumbled

Salt and pepper to taste

Mayonnaise to moisten (approximately 2-3 tablespoons)

Chopped pimento (optional)

Drain peas very well. Add onions, crumbled eggs and mayonnaise. Season to taste. Add pimento (if desired.)
