Garden Pea Salad


Ingredients:
  • 2 cans very young early peas (only Lesueur), drained
  • 1/4  cup  chopped onions
  • 2 boiled eggs, crumbled
  • Salt and pepper to taste
  • Mayonnaise to moisten (approximately 2-3 tablespoons)
  • Chopped pimento (optional)
Directions:

Drain peas very well. Add onions, crumbled eggs and mayonnaise. Season to taste. Add pimento (if desired.)

Yield: 4 servings
