Ingredients:

orange juice

sugar

tablespoon
cornstarch
- 2
teaspoon
lemon juice
- 2
tablespoon
butter
- 1/4 to 1/2
teaspoon
rum extract
- 1
cup
stewed fruit (optional)

Directions:

Combine orange juice sugar and cornstarch and cook over double boiler until thickened. Remove from heat and stir in lemon juice, butter, and rum extract. Spoon over plated rice pudding. Garnish with optional stewed fruit.
Yield: About 1 1/2 cups
