With the summer heat upon us, there’s no better time than now to share my ice pops recipes with you all. I am so tickled to be able to share with you some refreshing recipes that are a hit with both kids and adults and keep everyone coming back for more. Using all natural ingredients and still able to satisfy a sweet tooth, they’re bound to be quick and easy recipes you’ll come back to all summer long.
I love anything all-natural, as you all may know by now, and if you’ve perused the freezer aisles at most grocers lately, popsicles and their likes are anything but natural. Laden with artificial ingredients like red40 and sugar substitutes like high fructose corn syrup, I’m not so keen on giving these treats to young kids if I can help it.
So, with the help of a good friend of mine, a trip to the peach farm, and another trip to the berry farm just outside of town, we created great-tasting, all-natural ice pops that use fresh, local berries and peaches after a day of picking at the berry patch! It’s a tasty treat that’s kid-tested and mama-approved! Plus, you could easily substitute any fresh berries in the recipe – just be sure to pick up BPA-free pop molds and pull out the blender. It’s that easy. You’re ready to get started!
Why avoid BPA?
BPA or Bisphenol A is a man-made chemical that has been used in plastic products for the past 40 years. It’s in water bottles, hospital devices, in the lining of canned foods and drinks, and many other products. It was used in baby bottles and baby feeding devices until recently. Most baby companies do not use BPA anymore due to many concerns in lab animals linked with cancer, hormone levels, heart problems, brain and behavior problems among others. With this increased awareness, why not just stay away from BPA when possible? I found a set of 4 silicone molds for our ice pops on Amazon for less than $10. They’re flexible, reusable, dishwasher safe, and BPA-free.
Black ‘n’ Blue Pops
1C peaches, peeled and chopped. About 4 peaches.
Juice of half Meyer lemon
Place peaches in bowl and toss with sugar. Add lemon. Place all ingredients in blender. Blend for 20 seconds on low, another 10 seconds on high. Pour into molds and freeze for at least an hour. Enjoy!
Peach Lemonade Pops
2C peaches, peeled and chopped.
Juice of 2 Meyer lemons
Place peaches in bowl and toss with sugar. Add lemon juice. Place all ingredients in blender and blend for 30 seconds. Pour into molds and freeze for at least an hour. Enjoy!
Blueberry Basil Lemonade Pops
With all of the berries we collected, I couldn’t resist preparing a twist on a favorite local cocktail of mine for the “grown ups.” It’s a perfect way to wind down a hot day on the back porch!
1/2C simple syrup – simply take 1/2C water and add 1C sugar. Boil water, add sugar and allow to boil down until sugar dissolves. Remove from heat. Let cool. Bottle.
Juice of 2 Meyer lemons
1/4C chopped, fresh basil
Place blueberries in bowl and toss with sugar. Place in blender. Add lemon juice, simple syrup, basil, and vodka. Blend for 30 seconds on low, 10-15 on high. Pour into molds. Allow to freeze for 2 hours. Enjoy with friends.
