The Deen Bros. Lighter Slow Cooker Smoked Pork, Lentil and Sauerkraut Soup

Ingredients:
2 (32-ounce) containers reduced-sodium chicken broth
1 (16-ounce) package reduced-sodium sauerkraut, rinsed and drained
1 (10-ounce) package mushrooms, sliced
1 large onion, chopped
2 carrots, chopped
2 celery stalks, chopped
1 cup lentils, rinsed and drained
1 large tomato, chopped
3/4 pound fully-cooked boneless smoked pork chops, trimmed and cut into 1-inch pieces
Directions
Combine the broth, sauerkraut, mushrooms, onion, carrots, celery, lentils, and tomato in a 5 – or 6 – quart slow cooker. Cover and cook until the lentils are tender, 4 – 6 hours on high or 8 – 10 hours on low. Add the pork chops during the last 30 minutes of cooking time and heat through.
