Y’all, it’s sandwich week here at Momma’s website and she asked us to add one of our favorites. You might think we would choose a juicy cheese-topped burger…or something smeared with pimento cheese. But, between the both of us we could probably devour ten of these Cucumber, Vidalia Onion and Cream Cheese Sandwiches each…without even blinking.
Cucumber, Vidalia Onion and Cream Cheese Sandwiches
Ingredients:
2 ounces cream cheese, softened
1/4 cup chopped, pitted kalamata olives
1/2 teaspoon freshly ground black pepper
8 slices white bread, crusts removed if desired
1 medium cucumber, thinly sliced
1 small Vidalia onion, thinly sliced
Instructions:
In a small bowl, beat together the cream cheese, olives, and pepper. Spread each slice of bread generously with the cream cheese mixture. Top 4 slices of bread with cucumber and onion. Cover with the remaining 4 slices bread. Cut sandwiches into halves or quarters.
