We are all looking for ways to stretch our grocery dollars these days and still make delicious meals for our families. In this recipe series The Paula Deen Test Kitchen will share a new leftover recipe with you. Each recipe will start with the leftovers from one of Paula’s simple and classic dinner entrees. With those dinner leftovers, a few inexpensive fresh ingredients and items from your pantry we created a simple recipe sure to delight your belly and not break the bank.

This week, your Leftover Prime Rib from Sunday supper becomes a lunch of Prime Rib Sandwiches with Caramelized Onions, Arugula and Horseradish Cream in under 30 minutes!

Original Recipe: Prime Rib with Rich Pan Sauce
Leftover Recipe: Prime Rib Sandwich with Caramelized Onions, Arugula, and Horseradish Cream

Prime Rib Sandwich with Caramelized Onions, Arugula and Horseradish Cream

Ingredients:
Leftover prime rib, sliced thin
2 tablespoons butter
1 large Vidalia onion, sliced thinly
4 sandwich rolls, such as ciabatta or sourdough, split lengthwise and toasted
¼ cup mayonnaise
¼ cup sour cream
3 tablespoon prepared horseradish
¼ cup baby arugula leaves

Directions:
In a large skillet over medium heat melt the butter.
Add the onions and cook until golden and caramelized, about 15-20 minutes.
In a small bowl, combine the mayonnaise, sour cream, and horseradish.
Spread generously on each side of the rolls.
On one side of the roll layer prime rib slices, caramelized onions, then arugula.
Top with remaining half of roll.

cook time:  15-20 minutes
