Ingredients

  • 1 tablespoon peanut oil, for frying
  • 1/4 lb bacon, chopped
  • 1 tablespoon butter
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 1 teaspoon garlic, minced
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon garlic powder
  • 4 cups diced tomatoes, peeled and cored
  • 1 cup water
  • 1 tablespoon chicken base
  • 4 cups sliced okra, fresh or frozen

Preparation

In a large skillet, heat the oil over medium heat. Add bacon, butter, onion, green pepper and garlic. Saute until the vegetables are soft and the onions are translucent. Add seasoned salt, garlic powder, tomatoes, water, chicken base and okra. Bring to a boil. Reduce the heat and let simmer for 30 minutes stirring occasionally. Season, to taste, with salt and pepper.

Delicious! Our o

Delicious! Our okra and tomatoes are coming on fast and I had an abundance I needed to use up. I made a double batch of this recipe and it is delicious. I did end up tweaking the seasoning a little. I added 1 tablespoon of brown sugar to help cut the acid from the tomatoes a little. I also added 1 teaspoon of crushed red pepper to give it a little umph. I think next time I would add some fresh corn for texture. I'm giving it 5 stars but the website keeps changing my rating so I hope it stays as a 5 star once I submit it.
