Mango Chutney Recipe by Paula Deen

  • 2 1/2 cups mangos, diced
  • 1 1" piece fresh ginger, peeled
  • 1 minced dried Scotch bonnet chile
  • 1 clove garlic, minced
  • 1/4 teaspoon salt
  • 1/2 cup vinegar
  • 1/2 cup light brown sugar, firmly packed
  • 1/2 cup raisins
  • pepper, to taste


Place all ingredients in a non-reactive pan. Bring to a boil, reduce heat to low, and simmer until thick, about 25 minutes, stirring often to keep from sticking. Makes 2 1/2 cups. Let cool, and store in an airtight container.
