Chicken Chart

Most people know their favorite parts of the chicken. Those they reach for first inside the picnic basket. What most don’t know is exactly where those butcher cuts are made. Let Paula’s chicken chart be your guide. As a bonus, each cut will take you to some of our favorite recipes using the coordinating cut.



The Wing consists of three sections, the wing tip, the wingette (or flat wing tip), and the drummettes.





The Leg of a chicken consists of two parts, which are the thigh and the drumstick. Dark meat only.




The top portion of the leg, above the knee joint that is connected to the body of the chicken. Dark meat only.




The bottom portion of the leg below the knee joint. Dark meat only.




The Giblets consist of the neck, liver, heart and gizzard.

Love all of these chicken recipes and all the other ones to.  I miss Paula on TV as she is not on any stations I get anymore.  I used to watch her at 4 in the afternoon all the time and sometimes actually had the ingredients of what she was making that day in the house and had it for supper.  Sure miss Paula’s laugh and all of her happiness.  Hope the stations I get will bring her back soon.

I love the chicken chart.  It would be great on an apron.  My house is full of chicken and roosters.  I love you Paula !! I once met you at a book signing,  I watch all of your shows, QVC and have many of your cook books.  Last year our vacatioin was centered around going to Lady and Son’s , we loved it and Savannah.  Too bad that you weren’t there that day, but we loved it anyway.  I hadmy picture taken by your cutout. lol Anyway, I love you !  Keep on doing what you do !!

This would make a great T-Shirt or an Apron.  I’d go for it Paula.  Also I’m like you, I can cut a chicken up and “Pick” a chicken down to the bones.  Maybe cause I just love chicken and could eat it everyday, really.  My husband doesn’t like it, so I get the whole chicken.  I love your chicken recipes, gives me more ways to eat it!!!

I agree with you Paula, the chicken chart would be a GREAT Apron!!, I love your website, your tv shows, your magazine, love what you puton food network and Love just about everything you do! you are so cheerful, that is i’m having a bad day you pick me right up,and i have alot of bad days with a lung problem it is no fun but you put a smile on my face every time!  Thank you for being you and not some fake person like some of them, OOPS maybe i should not of said that but On well!!  you have yourself a GREAT DAY!!!!!

Some really yummy recipes on here. I also think this would make a great tshirt. I collect chickens and roosters and have them all over my tiny kitchen. So I am all for anything chicken!
