Recipe Courtesy of Paula DeenThe olives are optional—but I like this snappy Mexican soup better with them.
Servings: 12 to 16 servings
Prep Time: 15 min
Cook Time: 8 hours crock pot, 1 hour stock pot method
Difficulty: Easy
Jalapenos
Chopped green onions
Grated cheese
Sour cream
Corn chips
1 1-ounce package ranch salad dressing mix
1 1 1/4-ounce package taco seasoning mix
1/2 cup green olives, sliced (optional)
1 small can black olives, drained and sliced (optional)
2 4 1/2-ounce cans diced green chilies
1 14 1/2-ounce can tomatoes with chilies
1 14 1/2-ounce can diced tomatoes
1 14 1/2-ounce can mexican tomatoes
1 15 1/4-ounce can whole kernal corn, drained
1 15 1/2-ounce cans pink kidney beans
2 15-1/2 ounce cans pinto beans
2 cup diced onions
2 lb ground beef
Brown the ground beef and onions in a large skillet; drain the excess fat, then transfer the browned beef and onions to a large crockpot or a stockpot. Add the beans, corn, green onions, tomatoes, chilies, olives, and seasonings, and cook on low setting all day (6 to 8 hours) if using a crockpot, or simmer over low heat for about 1 hour in a stockpot on the stove. To serve, place a few corn chips in each bowl and ladle soup over them. Top with sour cream, cheese, and jalapenos.

Love this recipe and use it quite often. Great for sharing with friends and neighbors. Even better the next day - if there's any left! Sometimes I substitute ground turkey for the beef and it's still delicious!

This is wonderful. Try adding a can of white hominy and a can of yellow hominy to this.

Super easy to make, and my family loved it. My husband must have said least half a dozen times how much he liked it and had to stop my daughter from getting 3rd's. Great meal for a cub scout fall campout. Even with all the tomatoes the kids loved it.

This was soooo tasty. I added 2 packs of taco seasoning just to give it the extra flavor.

I USE THE RECIPE OF YOURS , BUT I CHANGE THINGS A LITTLE,, LIKE I DO MOST RECIPES AFTER TRYING THEM , I HATE THE SKIN ON KIDNEY BEANS SO I USE RED BEANS ,AND I ADD SLICED jalapenos. I USE STEWED TOMATOES, I SQUISH IN MY HAND, CAUSE THEY ARE CHEAPER AND I ADD KNORR BULLION CUBES TO THE BEEF WHEN IT IS ALMOST DONE I USE 3 CUBE PER POT AND THEN WHEN IT IS SIMMERING I ADD V- 8 JUICE TO THIN IT OUT AS I COOK IT ON THE STOVE IN ONE POT, COOK BEEF AND ONIONS AND 2 STALK OF CELERY THEN ADD TOMATOES THEN EVEY THING ELSE THEN S ABOUT 1/3 CUP OF GATOR SAUCE MADE HERE IN FLORIDA IN FELDA FL. BY GATOR HAMMOCK IT IS THE BEST HOT SAUCE I DONT LIKE HOT SAUCE BUT THIS ONE IS DIFFERENT IT HAS DIFFERENT FLAVORS NOT LIKE TABASCO I PUT IN IN LOTS OF THINGS LIKE MEAT LOAF. SOUPS , BUGGERS ,STAKES JUST ABOUT ANYTHING IT ADDS FLAVOR NOT JUST HOT AND VINEGAR ,REALLY THIS IS WHAT WE HAVE NOW INSTEAD OF CHILI,,IT IS GREAT FOR POT LUCK DINNERS TOO, OR TO MAKE FOR A FRIEND IN NEED OF TLC, I FOUND THAT ALL THE CHILI'S AND BEANS ARE A LOT CHEAPER IN THE HISPANIC ISLE IN THE STORE ,, AND THOSE KNORR BULLION CUBES ARE HALF THE PRICE IN THE HISPANIC ISLE ALSO,, BUT I TRY TO GET MOST OF MY CAN THINGS AT ALDI'S GROCERY STORE ITS ONLY 49 CENTS A CAN THERE FOR CORN AND STEWED TOMATOES AND THEY ARE THE SAME ONES YOU GET EVERY WHERE ELSE ,, MY HUSBAND WAS A DELIVERY MAN FOR WHOLE SALE STORE AND HE SAID IT ALL COMES FROM THE SAME PLACE JUST HAS DIFFERENT LABELS ON THEM ,ENJOY PAULA ROCKS SHE IS THE BEST COOK IN THE WORLD
