Ingredients Add to grocery list

1 (18.25-ounce) box white cake mix
1 (3-ounce) box strawberry-flavored instant gelatin
1 (15-ounce) package frozen strawberries in syrup, thawed and pureed
4 large eggs
1/2 cup vegetable oil
1/4 cup water
Strawberry cream cheese frosting, recipe follows

Strawberry Cream Cheese Frosting
1/4 cup butter, softened
1 (8-ounce) package cream cheese, softened
1 (10-ounce) package frozen strawberries in syrup, thawed and pureed
1/2 teaspoon strawberry extract
7 cups confectioners’ sugar
Freshly sliced strawberries, for garnish, optional

Directions

Preheat oven to 350 degrees F. Lightly grease 2 (9-inch) round cake pans.

In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil, and water; beat at medium speed with an electric mixer until smooth. Pour into prepared pans, and bake for 20 minutes, or until a wooden pick inserted in the center comes out clean.

Let cool in pans for 10 minutes. Remove from pans, and cool completely on wire racks.

For the frosting:
In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy. Beat in 1/4 cup of the strawberry puree and the strawberry extract. (The rest of the puree is leftover but can be used in smoothies or on ice cream for a delicious treat.) Gradually add confectioners’ sugar, beating until smooth.

Spread frosting in between layers and on top and sides of cake. Garnish with sliced fresh strawberries, if desired.

When I make cream cheese frosting, I just use cream cheese and a little bit of powdered sugar. The powdered sugar is what makes it runny. Just gradually add it until it's just thick enough.

My mother just called to say she had made this wonderful strawberry cake from Paula's magazine issue June 2008. So I pulled this one up. Same name but in comparing the ingredients we noticed that the magazine recipe called for 10 ounces of strawberries pureed where this one has 15 ounces. She purchased a large bag of frozen strawberries and let them thaw out before pureeing them. Then measured out 1 1\4 cup of puree for the cake. A 1\4 cup for frosting and froze the remainder. As for the frosting, she added about 2 tbsp of marshmellow cream and a drop of red food coloring. There was not one single piece of the cake left.

I also had a problem with the frosting being runny. The cake was fantastic. I used the frosting in between cakes and made a whipped cream frosting and added strawberry extract in the whipped cream frosting. It tasted fantastic. I wish I could have got the original frosting to a normal consistently. Any suggestions? ? I love your recipes!!

Runny icing??? Do not use frozen strawberries or extract. Dice up fresh strawberries (2-3 handfuls), add to cream cheese mixture with a few drops of strawberry syrup (like to make strawberry milk) beat this all with a hand mixer gradually adding powdered sugar until consistency you desire. Do not use puree machine.

I had a challenged with the simply delicious strawberry cake, could not locate strawberries in syrup or instant strawberry gelatin, I used strawberries in sugar and instant strawberry cream pudding, and mines came out not so good? Could the strawberries in sugar/ instant pudding be my problem? I did look everywhere for the correct ingredients but could not locate. Where maybe I could find the correct items, But I did make the chocolate heaven cake, strawberry shortcake, and the red velvet cake they were awesome!

I tried this recipe over the holiday and my icing was runny... The cake was delicious I made some mini cupcakes to wrap in fondant, but ended sampling one and we ate them plain. It is actually the second time I've made the recipe but I thought that because I tried to make half a batch I may have made a mistake, but even when i followed it very close to exactly only using a few drops of food coloring to give it color! Is there a certain brand of powder sugar that does best? Or something I'm missing? The cake is so good and I want to do it justice because yours is so beautiful... Anyone's direction would be greatly appreciated....
