Servings: 6 servings
Cook Time: 30 min
Difficulty: Easy

Ingredients Add to grocery list

8 tablespoon (1 stick) butter
1   small bell pepper, sliced thin
1   small onion, sliced thin
Paula Deen’s House Seasoning (to taste)
1/2 cup sour cream
2 cup mashed potatoes
1 1/2 cup grated Cheddar cheese
4   medium potatoes, cooked
6   slices of bacon, cooked crisp

Preheat oven to 350 degrees.  Spread mashed potatoes evenly on bottom of casserole dish.  Layer sour cream evenly over top.  (Each time you add a layer, sprinkle on a little House seasoning.)  Saute onion and bell pepper in butter; evenly layer over top of sour cream.  Next, layer with 1/2 cup Cheddar cheese.  Slice potatoes and layer over cheese until top is completely covered with potatoes.  Finally top with remaining 1 cup cheese.  Bake for 25-30 minutes.  Remove from oven and crumble bacon over top.

Leftover mashed potatoes work wonderfully in this recipe.

Dear Paula, This potato dish looks and sounds delicious, although I haven't tried it yet. But I just want to say that I love you, Paula, and your shows, your magazine your cookbooks and many other things you have to offer, including your sons' shows. I support you, Paula, and I'm praying for you. I pray, when all is said and done, you will come out on top! Love and Prayers, Lois

Excellent! My family loved it! One suggestion, use less butter. I actually drained most of it off. I did cook longer than suggested (abouy 15mins)as potatoes were not cook through after 30mins (and yes they were sliced thin and evenly) Otherwise, quite a hit in my house!

Question, preparing this for Christmas dinner. Can I make it 24 hours before and refrigerate until baking?

By Becky Dickson on December 21, 2012

This was very yummy....although I think it should cook a bit longer as the top potatoes did not cook fully and were still a little hard.

At night while my husband is watching tv, I get out my I-pad and look at all the pretty Paula dishes she has prepared and plan what I am later going to cook the way Paula says. Love all the little side notes she talks about.

I found this recipe several years ago and have used it for special meals when guests come over ever since. You can make it ahead of time and pop it in the oven at whatever temperature works with the rest of your meal. You can also adjust the proportions to the number of guests. (Leftovers are great!) There are so many comments about the butter. I use some of the butter to pour over the casserole, but you can adjust it to your taste. If you love mashed potatoes, you'll love this. If you love baked potatoes, you'll love this. You just can't miss with this recipe!!! If I remember correctly, Paula came up with this recipe to use leftover potatoes. Wow, what a transformation!
