Difficulty: Easy
1 medium head cauliflower
1/3 cup chicken broth, warmed
2 tablespoons reduced fat sour cream
Salt and Pepper
Thinly sliced fresh chives for garnish
Place the cauliflower florets in a microwave-safe bowl with 1/4 cup water, cover with plastic wrap and microwave for 3 to 5 minutes, or until completely tender.
Place the cooked cauliflower in a food processor. Add chicken broth, sour cream, salt and pepper; puree until smooth. Serve garnished with sliced chives.

Everyone asking for nutritional info can calculate it themselves. My Fitness Pal has a recipe tool where you can put in the ingredients & how many servings and it calculates ALL of the nutritional data. In a perfect world, recipe sites would put that, but they don't. And it's helpful if you develop your own recipes.

I love mashed potatoes so much, so I never thought I would try this. Love. love, love mashed cauliflower I've been doing this for several months and its a good way to get in a vegetable. I'd love more nutrition information on your recipes as I am diabetic.

didnt have a food processor so I mashed them the best I could. used low sodium broth and full fat sour cream . I also added shredded colby jack cheese in it and also on top and placed it in the oven to melt the cheese. I liked them but the family not so much . but overall.... good and easy !
